Restaurant and Bar Nears Completion at Valencia Hyatt

Hyatt Regency Valencia is to open its transformed restaurant and bar in early 2019 as Greater Pacific. In recent months, the hotel has been constructing the restaurant without disrupting business. The hotel has announced that Greater Pacific will open in either late January or early February. General Manager Mark Kirsch, Executive Chef Daniel Csotai and Sushi Chef Eric Hu told the Santa Clarita Valley Signal that the renovated restaurant will offer high-end sushi and a brand new cocktail program, as well as a private dining room, live entertainment section and new flat-screen televisions at the bar. Since its 1998 opening, the hotel has hosted its in-house restaurant and bar Vines. With Greater Pacific, the restaurant will segue from Vines’ fine meals and cocktails to a healthier fare, leaning heavily on seafood, including both tradition and fusion-style sushi. Sarah Roseblade, the hotel’s food and beverage director, said the cocktail program will feature new signature drinks as well as a variety of sake to accompany the sushi. Considered by many as Santa Clarita’s most prominent hotel, the hospitality destination hosts many of the local civic and business events, including the State of the City event in October.
